A classic northern Chinese flatbread known for its chewy texture and crispy exterior. Traditionally baked in a clay oven, Baijimo is the essential companion to dishes like Roujiamo (Chinese-style meat sandwiches), but its versatility makes it perfect for stuffing with anything savory or sweet.

Heating Instructions:​
Keep frozen until ready to use. Best when crispy on the outside, soft and chewy inside.

Oven (Recommended – Most Reliable)
  1. Preheat oven to 425°F (220°C).
  2. Place frozen flatbread directly on the middle oven rack (no tray) for even heat and crisp bottom.
  3. Bake for 10–12 minutes, flipping halfway through.

Steamer + Pan Finish (Authentic Chinese Method)
  1. Steam frozen flatbread for 5–6 minutes, or until fully softened.
  2. Transfer to a dry pan over medium heat.
  3. Toast for 1–2 minutes per side to create a golden, crisp shell.

Air Fryer (Quick Option)
  1. Preheat air fryer to 375°F (190°C).
  2. Place flatbread in a single layer.
  3. Air fry for 6–8 minutes, flipping at 4 minutes. Adjust time as needed for desired crispness.

Microwave (Not Recommended)
  • Results in rubbery texture and uneven heating.
  • Signature crisp-chewy contrast is lost.
  • Avoid unless reheating and pan-finishing immediately after.


Pro Tips & Serving Suggestions
  • Traditional Serving: Slice horizontally and stuff with braised pork (roujiamo) or spiced tofu.
  • Extra Crisp? Lightly brush with oil before baking or frying.
  • After Thawing: Use within 24 hours. Refresh in pan or oven before serving.
